Position Overview

The primary function of the Chef de Cuisine is to assume the following job responsibilities: creating menus, designing corresponding recipes and overseeing the preparation of those recipes. Manages all kitchen employees, including waiters, dishwashers and bussers. A chef de cuisine tracks the kitchen’s inventory, places orders, monitors equipment maintenance and condition, and ensures that a kitchen operates alongside state and federal health and safety codes. Provide quality service to ensure positive results reflected in Quality Assessments, AAA, Forbes standard results and guest comment cards.

Essential Functions & Physical Requirements

·         Requires good communication skills, both verbal and written.

·         Thorough knowledge of food products, standard recipes and proper preparation.
·         Ability to analyze, forecast data, and make judgments to ensure proper payroll and production control.
·         Ability to supervise large staff and accomplish goals on a timely basis
·         Ability to conduct meetings, menu briefings and maintain communication lines between line staff, Executive Chef and Director, Food & Beverage.
·         Select, train, evaluate, lead, motivate, coach, and discipline all employees in the Kitchen’s cold food production area to ensure that established cultural and core standards are met; long-range strategic planning for outlet operation.
·         Assist in the planning and development of menus and recipes, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration, utilize creative menu planning to minimizing waste.
Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
·         Ensure that sanitation standards as set forth by The Beverly Hills Hotel, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen.
·         Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality.
·         Communicate with employees and managers to ensure operational needs are met, coordinate menu tastings and pre-meal meetings to educate staff on food taste and preparation methods, attend regular operational meetings to ensure effective coordination and cooperation between departments; interact directly with guests to ascertain satisfaction.
·         Comply with The Beverly Hills Hotel Kitchen Standard Operational Procedures and Standards of Conduct as set forth in The Pledge.
·         Work harmoniously and professionally with co-workers and supervisors.
·         Build effective working relationships with each hotel’s senior leadership teams and operational leaders.
·         Accomplish desired results by setting priorities 

Qualifications and Desirables


Minimum of 3+ Years high volume restaurant experience and 6+ Years total culinary experience, Culinary degree from an accredited restaurant school preferred. Relationships with farmers, wholesale organic suppliers a plus.  Ability to create and maintain seasonal menu,  High quality food standards, California Food Safety Certification card, Four-Diamond, Four Star, multi-outlet Food and Beverage operation. Excellent people and conflict resolution skills and a well-groomed appearance. Excellent communication and math analyzing skills. 


Must be familiar with office technology including but not limited to the following: scanner, computer, iPhone/iPad and telephone systems.

Ability to communicate fully in English with all levels of management and co-workers.  Ability to read and interpret documents such as recipes, memos, safety rules, operating and maintenance instructions and procedure manuals.  Ability to write routine reports and requisitions.  Ability to speak effectively before groups of customers or employees of organization. Ability to create, write and produce correspondence and documents.  Ability to speak effectively and professionally before groups of customers or staff. Second language as Spanish desired.

Mathematical and statistical proficiency to be able to analyze and evaluate data. Ability to add, subtract, multiply and divide in all units of m Spanish highly recommended
