Position Overview

As the Pastry Sous Chef, you will be assisting the Pastry Chef in managing the Pastry and Bakery, enabling the team to achieve the highest possible standards and service, while also providing exceptional employee engagement and customer care. 

 

Essential Functions & Physical Requirements

  • Supervises with Pastry Chef and coordinates all activities and personnel concerning food preparation, pastry and storeroom areas, and cleanliness of all kitchen area.
  • Maintains food quality control. Ensures proper food rotation, which will eliminate spoilage and waste.
  • Assist Pastry Chef for menu planning, food production and controls food costs; as well as hiring, training and evaluation of back-of-house team members
  • Assist Pastry Chef for control of payroll, overtime, holiday requests, absenteeism, HACCP control, accidents and sickness
  • Adheres to the Alain Ducasse and The Dorchester policies and procedures

Qualifications and Desirables

  • Extensive experience as a Pastry Chef or Sous Chef Pastry in a 5 star establishment
  • Excellent written and verbal communication skills
  • Michelin stars experience
  • Knowledge of Health & Safety  requirements
