Assists in the overall operational management of entire Pastry team and personnel of the Pastry staff. Promote Mission Statement, Product and Service Standards, and Marketing Goals of Hotel Bel Air.

Essential Functions & Physical Requirements

ESSENTIAL JOB FUNCTIONS:

DUTIES AND RESPONSIBILITIES:

  • Ensure implementation of standards set by the Executive Pastry Chef & Executive chef on food quality preparation and presentation
  • Assist the Executive Pastry Chef and Pastry Sous Chef in menu planning and costing of her kitchen section.
  • Builds strong relationships with counterpart departments to ensure standards are met
  • Observes the physical condition of all the equipment and utensils in the section and informs the Chef as well as the maintenance department on repairs.
  • Controls food wastage without compromising on quality
  • Ensures store requisitions are accurate and conform to hotel policy
  • Assists chef on inspection of physical aspects of the section areas, cold room and equipment
  • Performs related duties and special projects as assigned
  • Recommends changes in systems and procedures to increase efficiency and improve service levels
  • Ensures all employees are trained in their job functions through follow up with trainers in the section and trains the trainers on new procedures and techniques.
  • Ensures that standard recipes are followed as per hotel policy
  • Ensures that all areas are cleaned at all times
  • Delegates work evenly to employees
  • Ensures that the weekly time schedule is followed as per hotel policy.
  • Communicates by various means in a professional means to all employees in the department.
  • Production lists, temperature charts, MSDA sheets are prepared and maintained.
  • Proper handover to the next shift and proper taking over from the previous shift for smooth operations.
  • Performs any other job related duties as required and requested

PHYSICAL REQUIREMENT 

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.  The requirements listed below are representative of the knowledge, skill, and/or ability required.  Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions

  • Must be able to bend, stoop, squat and stretch to fulfill cleaning tasks occasionally
  • Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity
  • Must have physical stamina to lift, carry, push and pull moderate amounts of weight up to 50lbs.  Ability to stand for long periods of time
  • Ability to work flexible schedule and various shifts, including but not limited to, days, nights, weekends and holidays 

Qualifications and Desirables

QUALIFICATIONS & DESIRABLES

  • A minimum of 3 years food and beverage hospitality experience in a fast past environment.
  • High school graduate and a 2 to 4 year apprenticeship, cooking school or culinary institute education.
  • Reading, writing and oral proficiency in the English language.
  • Proficiency in all pastry production, pastry equipment and pastry department operational skills.
  • High level of creativity and organizational skills.
  • Knowledge of the use of oven, tilt skillet, stand mixer, broiler, warmer, fryer, griddle and sauté equipment.
  • Extensive knowledge of chocolate work and confection (including bon bons).
