Able to fabricate meats and fish to specific size and shape from larger cuts. Prepare charcuterie, terrines, brines and cures of all forms. The Butcher maintains all California Health and sanitation codes. Able to work with all raw bar items and slice fish for sushi and work on the line as a line cook if need be cooking the proteins he prepares.

Individual must possess the following characteristics and requirements to perform the functions of the position. Professional appearance, confident demeanor, positive attitude, engaging personality, humility, integrity and abide by the principles, goals and policies in Hotel Bel-Air Pledge. Due to the nature of the hospitality industry, employees are required to work varying schedules, including weekends & holidays, to accommodate the business and demands of the hotel.

Essential Functions & Physical Requirements

ESSENTIAL DUTIES AND RESPONSIBILITIES including the following.  Abide by the principles, goals and policies in The Bel-Air Pledge and Handbook.

Meat Cutters are responsible for bringing necessary small equipment to work including a paring knife, peeler, chef’s knife, knife guard glove
Keep  pocket sized note pad or mole skin note book, sharpie or marker and pen to take notes.
Maintain all fabrication equipment in house at Hotel Bel Air
 

SUPERVISORY RESPONSIBILITIES:


Works directly with employees in the Banquet and individual Outlet Production Teams reporting to Outlet Sous Chef. Provides understand of ‘First in, First Out Policy’


QUALITY CONTROL:

Maintain food storage and handling procedures.
Maintain food quality and nutritional standards.
Perform technical culinary food production, portion control, and service standards.
 

OPERATIONS:


The responsibilities of the Butcher are as follows, but are not limited to
Follow production schedule.

  • Food preparation of meats/poultry/game/fish
  • Weighing and measuring
  • Maintain cooking temperature, product cooling and labeling.
  • Lifting and moving equipment to and from work stations, stove, and refrigerator.
  • Cleans work areas, equipment and utensils.
  • Distribute supplies utensils, and portable equipment.
  • Proficient knife skills and use of following equipment:
    • Tilting Steam Kettle
      Tilting Braising Skillet
    • Pressure-less Steamer
    • Deep Fryer
    • Mobile, Rotary and Convection
    • Ovens
    • Griddles
    • Burners
    • Buffalo Chopper
    • Electric Mixers
    • Electric Slicers
    • Bain Marie Heaters
    • Scales

QUALIFICATIONS REQUIREMENTS:


To perform this job successfully, and individual must be able to perform each essential duty satisfactorily.  The requirements listed below are representative of the knowledge, skill, and/or ability required.  Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.


EDUCATIONAL AND REQUIRED SKILLS:

  • High School diploma or general education degree (GED);
  • 1-3 years culinary training and experience;
  • Servsafe Certification(or) equivalent combination of education and experience.
  • Conversational English vocabulary.  Ability to read and comprehend simple instructions, short correspondence, and memos.  Ability to write simple correspondence.  Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.work ethic.

LANGUAGE SKILLS:

Able to read, write and understand the English Language
Basic Spanish is helpful but not mandatory

 

MATHEMATICAL SKILLS:

Ability to add and subtract two digit numbers and to multiply and divide these operations using units of weight measurement, volume, and distance.
Understanding of basic food cost and measured units of measurements in ounces and grams


REASONING ABILITY:

Ability to apply common sense understanding to carryout detailed  written or oral instructions.  Ability to deal with problems involving a few concrete variables in standardized situations.
